With Autumn soon upon us and the cooler evenings fast approaching, I thought what better supper to make, than a delicious warm bowl of roasted sweet potato and carrot soup. So when the lovely people at Savisto offered me the chance to review their premium hand blender, I jumped at the chance.
Prior to Savisto sending me their product, I hadn’t actually owned a hand blender, so for me this was a perfect opportunity to do some soup making, with a premium and handy kitchen appliance. Not to mention the gorgeous red colour, which I thought went perfectly with my kitchen.
I found my soup recipe on the BBC Good Food website and after purchasing my ingredients, I was good to go.
This recipe serves 4
Prep: 15 mins
Cook: 35 mins
500g sweet potatoes, peeled and cut into chunks
300g carrots, peeled and cut into chunks
3 tbsp. olive oil
2 onions, finely chopped
2 garlic cloves, crushed (I used garlic granules)
1l vegetable stock
100ml crème fraîche, plus extra to serve
- Heat oven to 220C/200C fan/ gas 7 and put the sweet potatoes and carrots into a large roasting tin, drizzled with 2 tbsp olive oil and plenty of seasoning. Roast the veg in the oven for 25-30 mins or until caramelised and tender.
2. Meanwhile, put the remaining 1 tbsp olive oil in a large deep saucepan and fry the onion over a medium-low heat for about 10 mins until softened. Add the garlic and stir for 1 min before adding the stock. Simmer for 5-10 mins until the onions are very soft, then set aside.
3. Once the roasted veg is done, leave to cool a little, then transfer to the saucepan (I transferred to the Savisto beaker) and use a hand blender to process until smooth.
Stir in the crème fraîche, a little more seasoning and reheat until hot. Serve in bowls topped with a swirl of crème fraîche and a good grinding of black pepper.
I have to say, the soup tasted absolutely gorgeous and the hand blender was so easy to use. It has 5 speed settings and I used the lowest setting, which was perfect for blending all the ingredients together so quickly and smoothly. The motor unit also attaches to the chopper and whisk, making it a handy piece of versatile equipment. It’s so easy to clean as well. I can’t wait to try out more soup and other exciting recipes now, this is one hand blender I certainly can’t live without!
