Spooktacular Halloween Cupcakes

130Okay so I couldn’t let Halloween completely pass me by without making something related to the occasion. I’m not a huge fan of Halloween, however I decided to indulge slightly by making these delicious cupcakes as they are a fun and easy bake to make and my girls absolutely loved them. These cupcakes have a chocolate sponge and a vanilla buttercream topping and are a perfect Halloween treat.

So if you are looking for a nice and easy Halloween cupcake recipe, then look no further, these are a sure crowd pleaser and look the part too.

Ingredients ~ makes 12

200g self-raising flour

40g cocoa powder

280g caster sugar

a pinch of salt

80g unsalted butter, at room temperature

240ml whole milk

2 eggs

1/2 teaspoon vanilla extract

For Vanilla Buttercream

250g unsalted butter, at room temperature

500g icing sugar

2 tablespoons whole milk

1/2 teaspoon vanilla extract

2 teaspoons of orange food colouring

To Decorate

Halloween edible toppers

Halloween sprinkles

1. Preheat the oven to 170°C. Put the flour, cocoa powder, caster sugar, salt and butter into a mixer or bowl and beat on slow speed until everything is combined.

2. Whisk the milk, eggs and vanilla extract together in a jug, then slowly pour half into the flour mixture and combine on a high speed, getting rid of any lumps.

3. Turn the mixer down to a slower speed and slowly pour in the remaining milk mixture until smooth. Do not over mix. Spoon the mixture into the paper cases until two-thirds full.

4. Bake in the preheated oven for 20-25 minutes, or until the sponge bounces back when pressed. A skewer should come out clean when inserted into the centre.

5. Leave the cupcakes to cool slightly before turning out onto a cooling rack to cool completely.

6. For the buttercream: beat together the butter, icing sugar, milk, vanilla extract and food colouring until smooth, then pipe the buttercream on top of each cupcake and decorate with the Halloween toppers. Happy Halloween!
