Cookies are nice and easy to bake, especially when you are short on time and these cookies are especially delicious, with a soft, gooey centre.
I found this recipe on BBC Good Food website and the delicious combination of plain and white chocolate and cherries is a perfect match. You can substitute the cherries for extra chocolate or nuts if you prefer. The original recipe makes 20 cookies, I made 15, purely down to my over generous dollops of individual cookie mixture.
200g unsalted butter, at room temperature
85g light muscovado sugar
85g golden caster sugar
225g self-raising flour
50g plain chocolate, roughly chopped (I used chips)
50g white chocolate, roughly chopped (I used chips)
85g glacé cherries, roughly chopped
Preheat oven to 190°C fan 170°C/gas 5
Beat the butter, sugars and egg until smooth
Mix in the flour, chocolates and cherries and 1/2 tsp salt
Spoon mixture onto non-stick baking sheets in large rough dollops
Make sure dollops are spaced out, as they will spread while cooking
Bake for 12-14 minutes until just golden, but still quite pale and soft in the middle
Cool on the sheets for 5 minutes, then lift onto racks and leave to cool completely
While the cookies were still relatively soft, I used a large cookie cutter to cut out a more even looking shape, as my cookies had spread quite a lot and ended up square shape rather than circular. I was extremely pleased with the end result and I’m sure you will be too.
