These orange and lemon butter biscuits are so easy to bake and the citrusy zesty taste comes through deliciously with every bite. Topped with orange and lemon glaze, they’re a sure crowd pleaser and go perfectly with a nice cup of tea.
Ingredients ~ makes about 12
125g butter, softened
100g caster sugar
200g plain flour
zest of 1 orange
zest of 1 lemon
1/4 teaspoon of baking powder
pinch of salt
For The Glaze
150g icing sugar
1 tablespoon orange juice or more if needed
1 tablespoon lemon juice or more if needed
- Heat oven to 180°C/350°F/gas 4. Grease a baking sheet with butter. Beat the butter and sugar in a bowl until creamy. Beat in the egg until the mixture is light and fluffy. Add the flour, orange and lemon zest, baking powder and salt and mix until you have a ball of dough. Cover and place in the fridge for 2 hours, or until firm.
- Roll out the dough on a floured surface until 1/2cm thick. Cut out shapes and place on greased baking sheet. Bake for 10-12 minutes until the edges are a light brown. Transfer to a wire rack to cool.
- Once the biscuits have cooled completely, mix together the icing sugar and orange and lemon juice. Using the tip of a spoon, drizzle the glaze over each biscuit. Enjoy!
