Cherry & Chocolate Chip Muffins

These delicious cherry and chocolate chip muffins are so easy to make and are perfect for when you are short on time. Ready in less than 20 minutes, they are ideal for when you have unexpected guests or you need a last minute dessert. I found this recipe on the GoodtoKnow website, changing it slightly by using glacé cherries in the mix and milk chocolate chips instead of a bar of chocolate, which I preferred and they tasted so good, especially accompanied with the fresh cherries. Ingredients ~ makes 12

300g self-raising flour

1 tsp baking powder

90g caster sugar

100g milk chocolate chips

200g glacé cherries

250ml milk

2 medium eggs

4 tbsp sunflower oil

12-hole muffin tray, lined with paper cases

Method

1. Preheat oven to 200°C. Sieve the flour and baking powder into a bowl and stir in the caster sugar, milk chocolate chips and glacé cherries.

2. Lightly beat together the eggs, milk and oil and stir into the dry ingredients. Spoon the mixture into the paper cases, ready for baking.

3. Bake in the centre of the oven for 15-18 minutes or until the muffins have risen and are a light golden colour and feel firm to the touch when gently pressed in the centre.

4. Remove from the oven and transfer to a wire rack to cool completely. Enjoy!

    Oh Caroline…. You know how to make a pregnant woman hungry for something yummy! 😀 As I have probably said before my force is not kitchen activities (unless it is eating), so I will immediately forward this recipe to Frenchie and send him on a shopping mission, so he can make me this muffins tonight 🙂 I know… I am spoiled! 🙂
