These double chocolate chip muffins are a chocoholics dream. They’re soft, fluffy and so chocolatey and go perfectly with a nice cup of tea. Made in three quick and easy steps, they are the ideal bake if you fancy something sweet and rest assured, everybody will love them.
Ingredients ~ makes 12
250g self-raising flour
25g cocoa powder
2tsp baking powder
175g caster sugar
2 large eggs, beaten
100ml sunflower oil
100g plain chocolate chips
1-2tsp vanilla extract
1. Preheat oven to 170°C. Line a 12 hole muffin tray with paper muffin cases.
2. Sift together the flour, cocoa powder and baking powder. Stir in the sugar. Add the remaining ingredients and mix lightly together.
3. Spoon the mixture into the cases and bake for approximately 20 minutes or until springy to the touch. Cool for 10 minutes, then transfer to a wire rack to cool completely. Enjoy!
