Raspberry Mojito Mocktail

The other day I made a delicious and sweet Strawberry Daiquiri Mocktail, which was a real hit with my daughters, so I thought I would continue with my mocktail success and this time make a raspberry mojito mocktail.

This mocktail was also a big winner with my family and what I especially loved about this particular one, was the fact that it was a really refreshing and revitalising drink and just perfect for those warmer days in the sun. Ingredients ~ serves 3/4 (depending on glass size)

4 raspberries per glass

big bunch of mint

3 limes quartered, plus extra for garnish

500ml raspberry juice

250ml lemonade

3 cubes of ice per glass


1. Reserve half the mint for garnish and tear the rest into a large jug with the lime quarters. Using the end of a rolling pin, bash the mint and limes together to release the flavours.

2. Add the raspberry juice and lemonade to the jug and stir.

3. Add 3 cubes of ice to each glass then sieve the raspberry mix into the glasses. Top each glass with 4 raspberries and garnish with lime slices and the mint. Enjoy!
